Early Harvest Excellence
Our olives are harvested in the early morning hours of October, when they contain the highest concentration of polyphenols and antioxidants. This early harvest creates SOFÌA's distinctive peppery finish and vibrant green color.
Cold Pressed Perfection
Within 2 hours of harvest, our olives are cold-pressed at temperatures below 27°C using traditional stone mills. This preserves the delicate flavors and ensures maximum nutritional value in every bottle.
Limited Production
Each year, we produce only a few hundred bottles of SOFÌA. Every bottle is hand-filled, individually numbered, and sealed with natural cork to ensure authenticity and traceability.
